Olive Garden Italian Kitchen has the best-unlimited soup, salad, and breadsticks for only $10.99. Every time my family and I go to Olive Garden, I have to get the Chicken Gnocchi Soup and salad. I got this copy cat recipe from Grandparents.com and with a few tweaks, I was able to make it Struggle-ious. I feel like Olive Garden Jr. ya’ll!
Ingredients:
1 tablespoon extra-virgin olive oil
1/4 cup (1/2 stick) butter
1/4 cup flour
1/2 cup finely diced celery flakes
1/2 cup finely diced onion
3 garlic cloves, minced
4 cups half-and-half (1 quart)
1 (12-ounce) package gnocchi*
1 cup finely shredded carrots (I used 1 whole carrot to shred)
1 cup shredded cooked chicken breast
2 (14-ounce) cans chicken broth (if you enjoy thick soup, use just 1 can)
2 cups coarsely chopped fresh spinach (I just ripped the spinach in a few pieces)
1/2 teaspoon salt, plus more if needed
1 teaspoon dried thyme
1/2 teaspoon dried parsley
1/4 teaspoon grated nutmeg
