I have really been trying to cook more healthier choices for us to eat. I have never tried eggplant and I was a bit nervous to even make it. It wasn’t bad but I don’t think my family liked it all that much.
I got this recipe from Kraft and I have tweaked it a little to what works for me. The recipe from Kraft suggest to peel the eggplant but I didn’t do that and the skin wasn’t a problem for me.
What you will need:
- 1/2 cup panko bread crumbs {I used Parmesan bread crumbs}
- 1/2 lb. spaghetti, uncooked
- 1 egg, beaten
- 1 large eggplant (1-1/2 lb.)
- 3/4 cup KRAFT Finely Shredded Italian* Five Cheese Blend
- 1/2 cup grated Parmesan cheese
- 1 Jar of Newman’s Own Roasted Garlic Sauce
